★Recipe Wednesday★


Avocado Eggadilla

Ingredients:
1/2 teaspoon extra-virgin olive oil
2 eggs
1 egg white
2 10-inch tortillas
1/2 cup shredded cheese
2 avocados

Directions:
1. Heat non-stick pan, big enough to fit tortillas, over medium-heat. Add oil. Add eggs, breaking yolks. Cook until eggs are sett enough to flip, about 2 minutes. Flip;cook until eggs are done. Transfer to plate, wipe out pan.

2. Return to heat and increase heat to medium. Place one tortilla in pan. Sprinkle on half the cheese. Place 1 avocado (sliced) on top then cooked eggs, then the rest of the avocado (layering effect) and then the remaining cheese and tortilla.

3. Cook until bottom tortilla is a little brown and cheese starts to melt, 1 to 2 minutes. Flip with spatula and brown the other side. Remove from pan and Enjoy!

**NOTE** This recipe is very quick and simple. I like a lot of avocado but you can always put more or less of what you want in it. This is one of my top choices for breakfast in the morning (besides my Hubby's hash brown burritos which he happens to be making right now). If you make it, I'd love to hear if you enjoyed it!
