I've shared this recipe on my blog before (sometime last year) but wanted to repost because it's soooo good and anything pumpkin related reminds me of Fall.
Pumpkin-Raisin Bread
Ingredients:
3 1/4 cup flour
2 tsp baking soda
1 tsp ground nutmeg
2 1/2 cups solid pack pumpkin puree
1 cup vegetable oil
1 cup raisins (or more.. I always add a bit extra)
1 1/2 tsp salt
1 tsp ground cinnamon
3 cups white sugar
2/3 cup water
4 eggs
2 tsp vanilla
3 tsp brown sugar
Directions:
1.Grease and flour 3 7x3 in pans. Preheat oven to 350.
2. Measure flour, sugar, baking soda, salt and spices into a large bowl. Stir to blend. Add pumpkin, water, vegetable oil, eggs and raisins. Beat until well combined. Pour batter into prepared pans.
3. Bake approximately 1 hour
It comes out sooooo moist and full of flavor!!
In other news... I'm almost finished with something I've been working on for awhile (that means since Saturday). Hopefully I will have it completely done by tonight and posted and ready for Thursday :) EEEk!!
